Tofu spread with tomatoes on homemade bread

The good old bread slices. If it should go fast times, you want to have as little effort as possible, but maximum taste, these vegan slices with tofu spread and tomatoes come just right. A high protein and great tasting snack, main meal or something to can on the go.

We pretty much always make our own bread, because we've been in the sourdough game for a few years now, yeah! Liike so you can save some ingredients, because for the production you need only flour, sourdough, water and salt. But that's not what we're talking about today - maybe some other time.

Indeed, today's start of this recipe is what goes on the bread. This tofu spread based on natural tofu. Natural tofu in itself may sound and taste boring at first, but not so fast with the prejudices! Because only through the other ingredients such as the yeast flakes for the cheesy note, the apple cider vinegar for a light soy and the spices we bring only really taste in this wonderfully creamy spread.

Four words are enough for the preparation: Everything in the blender! Totally simple, right? Ok, the garlic you can still cut coarsely, so that later no whole pieces are in the spread. Of course, it depends on what kind of device you use. I prefer to use our chopper for smaller portions. It's not only great for my energy ball creations, but also spreads like this one. Alternatively, stand mixers, hand blenders or food processors are also very suitable.

So, now we finally get to the dressing. Once you've smeared the vegan tofu spread nice and thick on your sandwiches, you can add the tomato slices, sunflower seeds and basil leaves. As a finishing touch still some coarse pepper and tada!

  • 4 slices of bread
Dip
  • 1 clove garlic
  • 200 g natural tofu
  • 2 Tbsp. apple cider vinegar
  • 2 tablespoons yeast flakes
  • 1 tsp thyme
  • 1 tsp rosemary
  • 0.3 tsp pepper
  • 0.3 tsp salt
Topping
  • 1 large tomato
  • 1 handful basil
  • 2 pinches of coarse pepper
  • 2 tsp sunflower seeds

Preparation

Click: 

  1. Toast the bread slices as needed.
  2. For the dip, peel and coarsely chop the garlic.
  3. Then place this in a blender or chopper with the remaining ingredients and blend to a creamy consistency.
  4. Spread the cream on the breads.
  5. For the topping, slice the tomatoes and spread on the breads with the remaining ingredients.
